Grilled Pork Chops with Basil Garlic Rub

Cut from the pork loin, pork chops can be found under a variety of names, including Porterhouse, Ribeye, New York, Sirloin and Blade pork chops. However you call it, you will definitely want to make this more than one time.

Ingredients

4 Bone-In Ribeye (Rib) Pork Chops, 3/4-inch thick
2 Cloves Garlic, peeled
1 cup Fresh Basil, packed
2 T. Fresh Lemon Juice
2 T. Extra Virgin Olive Oil
1 tsp. Coarse Salt
½ tsp. Black Pepper, freshly ground

Cooking Directions

1.
With machine running, drop garlic through feed tube of a food processor to mince.

Stop, add fresh basil, and process until chopped.
3.
Add lemon juice, oil, salt, and pepper and process to make a thin wet rub.
4.
Spread both sides of pork chops with basil mixture.
5.
Let stand 15 to 30 minutes.
6.
Prepare a medium-hot fire in grill.
7.
Brush the grate clean and oil the grate.
8.
Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145 degrees Fahrenheit, followed by a 3-minute rest time.
