Ingredients

1 Rack of Baby Back Ribs, St. Louis style or spare ribs
Dry Rub of Choice
1 c. Water
1/2 c. Apple Juice Concentrate
3 c. Barbecue Sauce of Choice
Rinse the rack of ribs and pat dry.
Remove the membrane from the bone side the help of a sharp knife.
Cover the ribs generously with dry ryb.

Cooking Directions

Pour water and apple juice concentrate into the instant pot.

Wrap the ribs in a circle with the meat side facing in and place in the instant pot on top of the rack so the meat isn’t touching the liquid at the bottom.

Put the valve at the top to the “sealed” position and set cooker to manual high pressure for 25 minutes. It will take about 10-15 minutes for the pot to build pressure and begin cooking.

While it’s doing this, preheat your grill to 350°.

Turn the valve at the top to “vent” once the time is finished. Once all of the pressure has released, you will be able to open the lid.

Now, although, they’re fully cooked, transfer the ribs to the grill to give some char and cook the sauce into the meat.

Cook over direct heat with meat side up for 15 minutes, then with meat side down for 10 minutes.

Flip back over and sauce generously. Let sauce cook in for 3 minutes, then flip and sauce other side.
10.
After 3 more minutes, the ribs are ready to go.
